Description

A cozy and nutritious dish combining tender chicken, brown rice, and a medley of veggies in a creamy sauce.


Ingredients

  • 1 lb Chicken Breast, cubed
  • 1 cup Brown Rice
  • 2 cups Broccoli, chopped
  • 1 cup Carrots, chopped
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Greek Yogurt or Sour Cream
  • 1 cup Cheddar Cheese, shredded
  • 2 cups Chicken Broth
  • 1 tablespoon Olive Oil


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook the brown rice according to package instructions and set aside.
  3. In a skillet, heat olive oil and sauté onion, garlic, broccoli, and carrots until tender.
  4. In a large bowl, combine the cooked rice, sautéed veggies, cubed chicken, Greek yogurt, cheese, and chicken broth, stirring until well mixed.
  5. Transfer the mixture to a greased casserole dish, spreading it evenly.
  6. Bake for 30-35 minutes until bubbly and golden.
  7. Let cool for a few minutes, then serve with fresh herbs.

Notes

Marinate chicken for extra flavor and consider adding spices like paprika. Leftovers taste even better the next day.
