- 1 lb Chicken Breast, cubed
- 1 cup Brown Rice
- 2 cups Broccoli, chopped
- 1 cup Carrots, chopped
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 cup Greek Yogurt or Sour Cream
- 1 cup Cheddar Cheese, shredded
- 2 cups Chicken Broth
- 1 tablespoon Olive Oil
Instructions
- Preheat oven to 375°F (190°C).
- Cook the brown rice according to package instructions and set aside.
- In a skillet, heat olive oil and sauté onion, garlic, broccoli, and carrots until tender.
- In a large bowl, combine the cooked rice, sautéed veggies, cubed chicken, Greek yogurt, cheese, and chicken broth, stirring until well mixed.
- Transfer the mixture to a greased casserole dish, spreading it evenly.
- Bake for 30-35 minutes until bubbly and golden.
- Let cool for a few minutes, then serve with fresh herbs.
Notes
Marinate chicken for extra flavor and consider adding spices like paprika. Leftovers taste even better the next day.
