Description

Creamy feta blends beautifully with velvety potatoes for a comforting, flavorful dish that’s simple to whip up.

Ingredients

  • Potatoes (Yukon Gold or Russet)
  • Feta Cheese (crumbled or block)
  • Olive Oil
  • Garlic (fresh or powdered)
  • Herbs (basil or oregano)
  • Salt and Pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and chop the potatoes into even-sized pieces.
  3. Toss potatoes with olive oil, minced garlic, herbs, salt, and pepper in a large bowl until well coated.
  4. Spread the potatoes in a single layer on a baking sheet and crumble feta over the top.
  5. Bake for 30-35 minutes, stirring halfway through for even roasting.
  6. Remove from oven, let cool slightly, and sprinkle with extra herbs before serving.

Notes

For a twist, you can substitute feta with goat cheese or use sweet potatoes for a different flavor.
