A fluffy, moist cake inspired by the iconic Butterbeer from the Wizarding World, featuring rich butterscotch flavor and a creamy frosting.

- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 package (3.4 oz) butterscotch pudding mix
- 2 tsp baking powder
- ½ tsp salt
- 3 large eggs
- 1 cup milk (or dairy-free milk)
- ½ cup unsalted butter, melted (or vegan butter)
- 1 cup cream soda
- 2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour your cake pans.
- In a large bowl, whisk together the flour, sugar, butterscotch pudding mix, baking powder, and salt until well combined.
- In another bowl, beat the eggs, then add the milk, melted butter, cream soda, and vanilla extract. Mix until smooth.
- Gradually mix the dry ingredients into the wet ingredients, stirring until just combined.
- Pour the batter into the prepared cake pans and bake for 25-30 minutes, or until a toothpick comes out clean. Let cool completely.
- Prepare the frosting with butter, powdered sugar, and a splash of cream soda.
- Once cooled, layer the cake with frosting in between, and top with additional frosting and butterscotch sauce if desired.
Notes
Use room temperature ingredients for better mixing. Experiment by adding butterscotch chips for an extra gooey texture.
