- 4 cups all-purpose flour
- 1 cup warm milk
- 1/2 cup sugar
- 1 cup pumpkin puree
- 2 1/4 tsp active dry yeast
- 2 large eggs
- 1/4 cup melted butter
- 2 tsp cinnamon
- 1 tsp vanilla extract
- 8 oz cream cheese (softened)
- 2 cups powdered sugar
- 1-2 tbsp milk (for frosting)
Instructions
- In a large bowl, combine warm milk and sugar, then sprinkle the yeast over the top. Let it sit for about 5-10 minutes until frothy.
- Add pumpkin puree, melted butter, eggs, and vanilla to the yeast mixture. Gradually add in flour and mix until it forms a soft dough.
- Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover it, and let it rise for about 60 minutes, or until it doubles in size.
- In a small bowl, mix brown sugar, cinnamon, and softened butter until combined.
- Roll the dough out into a rectangle (about 1/4 inch thick). Spread the cinnamon filling on top evenly.
- Starting from one long edge, roll the dough tightly into a log and slice into 12-15 pieces.
- Place the slices in a greased baking dish, cover, and let them rise for another 30 minutes.
- Preheat your oven to 350°F (175°C). Bake the rolls for about 25-30 minutes or until golden brown.
- While they bake, whip together softened cream cheese, powdered sugar, vanilla, and a tiny bit of milk until smooth.
- Let the rolls cool slightly, then frost with cream cheese icing and add Halloween sprinkles.

Ensure the yeast is fresh for the best rise and don’t rush the rising time for fluffier rolls.
