- 1 lb ground turkey
- 2 large sweet potatoes, peeled and diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 cups spinach or kale
- 1 cup cheddar cheese, shredded
- 1 tsp oregano
- 1 tsp paprika
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet over medium heat, add olive oil and the ground turkey. Cook until no longer pink.
- Add diced onion, garlic, and bell pepper, cooking until softened.
- Stir in spinach or kale along with oregano, paprika, salt, and pepper. Cook until greens are wilted.
- Prepare the sweet potatoes by peeling and dicing them, then steam or roast until tender.
- In a mixing bowl, combine the turkey mixture with sweet potatoes and half of the cheese.
- Pour the mixture into a greased baking dish, scatter remaining cheese on top, and cover with foil.
- Bake in the preheated oven for 25-30 minutes until heated through and cheese is bubbly.
- Let cool for a few minutes before serving, garnishing with fresh herbs if desired.
Notes
This casserole can be made ahead of time and stored in the fridge. Leftovers can be reheated in the microwave or oven.
