Cheesy, savory enchiladas filled with seasoned ground turkey and hearty black beans, wrapped in soft tortillas and smothered in zesty enchilada sauce.

- 1 lb ground turkey
- 1 can black beans, drained and rinsed
- 8 tortillas (corn or flour)
- 2 cups enchilada sauce
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet over medium heat, brown the ground turkey until fully cooked, breaking it up as it cooks.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
- Stir in the black beans, cumin, and chili powder to the turkey mixture until combined and warmed through.
- Spread some enchilada sauce on the bottom of a baking dish. Fill each tortilla with the turkey mixture, roll it up tightly, and place seam-side down in the dish.
- Pour the remaining enchilada sauce over the top and sprinkle with cheese.
- Cover with foil and bake for 20 minutes, then remove the foil and bake for another 10-15 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving. Top with your favorite garnishes such as cilantro, sour cream, or avocado.
Notes
Don’t overstuff tortillas, use fresh tortillas for better baking results, and consider make-ahead options.
