Description

Cheesy, savory enchiladas filled with seasoned ground turkey and hearty black beans, wrapped in soft tortillas and smothered in zesty enchilada sauce.


Ingredients

  • 1 lb ground turkey
  • 1 can black beans, drained and rinsed
  • 8 tortillas (corn or flour)
  • 2 cups enchilada sauce
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground turkey until fully cooked, breaking it up as it cooks.
  3. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
  4. Stir in the black beans, cumin, and chili powder to the turkey mixture until combined and warmed through.
  5. Spread some enchilada sauce on the bottom of a baking dish. Fill each tortilla with the turkey mixture, roll it up tightly, and place seam-side down in the dish.
  6. Pour the remaining enchilada sauce over the top and sprinkle with cheese.
  7. Cover with foil and bake for 20 minutes, then remove the foil and bake for another 10-15 minutes until the cheese is bubbly and golden.
  8. Let it cool for a few minutes before serving. Top with your favorite garnishes such as cilantro, sour cream, or avocado.

Notes

Don’t overstuff tortillas, use fresh tortillas for better baking results, and consider make-ahead options.
