A quick and healthy ground turkey and peppers dish, packed with flavor and easy to customize for busy weeknights.
Ingredients

- 1 lb ground turkey
- 3 bell peppers (red, yellow, green)
- 1 onion (sweet or yellow)
- 3 cloves garlic (minced)
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Chop bell peppers and onion into bite-sized pieces, and mince garlic.
- In a large skillet, heat olive oil over medium heat. Add onion and bell peppers, and sauté for 5–7 minutes until soft and starting to caramelize.
- Add ground turkey to the skillet, breaking it apart with a wooden spoon. Cook until browned, about 10 minutes.
- Add minced garlic and spices, stirring well; cook for another 2 minutes.
- Taste and adjust seasoning as desired. Serve hot.
Notes
Serve on rice or in lettuce wraps. Consider adding shredded cheese or sour cream.
