Description

Juicy chicken marinated in a rich coconut sauce with zesty Thai flavors, grilled to perfection on skewers.


Ingredients

  • 1 lb boneless, skinless chicken breast, cut into bite-sized cubes
  • 1 cup coconut milk
  • 1/4 cup soy sauce (low sodium if preferred)
  • 2 tablespoons fresh lime juice
  • 3 cloves garlic, minced
  • 2 tablespoons brown sugar (or coconut sugar)
  • Skewers (wooden or metal, soak wooden skewers in water for 30 minutes)


Instructions

  1. Cut the chicken into bite-sized cubes.
  2. In a bowl, whisk together coconut milk, soy sauce, lime juice, minced garlic, and brown sugar until combined.
  3. Add the chicken cubes to the marinade. Cover and refrigerate for at least 1 hour, or overnight for best results.
  4. Remove the chicken from the marinade and thread onto skewers, leaving space between pieces for even cooking.
  5. Preheat the grill to medium-high heat.
  6. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has grill marks.

Notes

For best results, marinate the chicken overnight. Serve with fresh herbs and a drizzle of spicy peanut sauce for added flavor.
