Description

Delicious grilled seafood skewers with shrimp, scallops, and firm white fish, perfect for summer gatherings.


Ingredients

  • Large, peeled shrimp
  • Fresh scallops
  • Firm white fish (like cod or halibut), cut into cubes
  • Bell peppers, cut into chunks
  • Zucchini, sliced into thick rounds
  • Olive oil
  • Fresh garlic, minced
  • Lemon juice
  • Salt
  • Pepper


Instructions

  1. Rinse and pat dry your seafood. If using frozen, thaw completely.
  2. In a bowl, mix olive oil, minced garlic, lemon juice, salt, and pepper to create a marinade.
  3. Toss the shrimp, scallops, and fish cubes into the marinade and let sit for 15-30 minutes.
  4. Thread the marinated seafood and veggies onto skewers, alternating as desired.
  5. Preheat the grill to a medium-high heat.
  6. Grill the skewers for 3-4 minutes per side until the seafood is cooked through and has grill marks.
  7. Serve and enjoy, optionally with a dipping sauce.

Notes

Don’t over-marinate the seafood to avoid rubbery texture. Soak wooden skewers in water to prevent burning.
