Description

A vibrant and nutritious salad combining grilled chicken marinated in lemon and herbs with orzo pasta, avocado, and fresh veggies.


Ingredients

  • 2 chicken breasts
  • 1/4 cup fresh lemon juice
  • 2 tbsp olive oil
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh thyme
  • 1 cup orzo pasta
  • 1 ripe avocado, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • Salt to taste
  • Pepper to taste


Instructions

  1. In a bowl, mix olive oil, lemon juice, and herbs. Toss in the chicken and marinate for at least 30 minutes.
  2. Preheat your grill to medium-high and grill the chicken for 6-7 minutes per side until cooked through.
  3. Boil salted water in a pot and cook the orzo according to package instructions until al dente, then drain.
  4. Chop the avocado, cherry tomatoes, and cucumber.
  5. In a large bowl, mix the cooked orzo, grilled chicken, and chopped veggies. Drizzle with olive oil and season with salt and pepper.
  6. Serve the salad in bowls, garnished with extra herbs if desired.

Notes

Use fresh herbs for maximum flavor. You can substitute chicken with grilled shrimp or chickpeas for a vegetarian option.
