Ingredients

- 2 chicken breasts
- 1/4 cup fresh lemon juice
- 2 tbsp olive oil
- 2 tbsp chopped fresh parsley
- 1 tbsp chopped fresh thyme
- 1 cup orzo pasta
- 1 ripe avocado, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- Salt to taste
- Pepper to taste
Instructions
- In a bowl, mix olive oil, lemon juice, and herbs. Toss in the chicken and marinate for at least 30 minutes.
- Preheat your grill to medium-high and grill the chicken for 6-7 minutes per side until cooked through.
- Boil salted water in a pot and cook the orzo according to package instructions until al dente, then drain.
- Chop the avocado, cherry tomatoes, and cucumber.
- In a large bowl, mix the cooked orzo, grilled chicken, and chopped veggies. Drizzle with olive oil and season with salt and pepper.
- Serve the salad in bowls, garnished with extra herbs if desired.
Notes
Use fresh herbs for maximum flavor. You can substitute chicken with grilled shrimp or chickpeas for a vegetarian option.
