Description

A comforting bowl of Ginger Garlic Chicken Noodle Soup, perfect for chilly evenings or when you need a cozy meal.


Ingredients

  • 2 cups shredded chicken
  • 4 ounces noodles (egg or rice noodles)
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated or minced
  • 2 medium carrots, sliced
  • 1 stalk celery, sliced
  • 1 medium onion, chopped
  • 6 cups chicken broth
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • Green onions for garnish


Instructions

  1. Heat a splash of olive oil in a large pot over medium heat. Add the chopped onion and cook for about 5 minutes until softened.
  2. Add minced garlic and ginger to the pot, stirring until fragrant.
  3. Add shredded chicken and mix with the onion-garlic-ginger combo.
  4. Pour in the chicken broth and bring to a gentle boil.
  5. Add sliced carrots and celery, simmering for about 10 minutes until tender.
  6. Add noodles and follow package instructions, usually 5 to 7 minutes.
  7. Stir in soy sauce, season with salt and pepper, and mix well.
  8. Ladle into bowls and garnish with green onions.

Notes

For extra flavor, use homemade chicken broth. You can also add red pepper flakes for a bit of spice. Leftover soup can be stored in the fridge for 3-4 days.
