- 2 cups shredded chicken
- 4 ounces noodles (egg or rice noodles)
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated or minced
- 2 medium carrots, sliced
- 1 stalk celery, sliced
- 1 medium onion, chopped
- 6 cups chicken broth
- 1 tablespoon soy sauce
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Heat a splash of olive oil in a large pot over medium heat. Add the chopped onion and cook for about 5 minutes until softened.
- Add minced garlic and ginger to the pot, stirring until fragrant.
- Add shredded chicken and mix with the onion-garlic-ginger combo.
- Pour in the chicken broth and bring to a gentle boil.
- Add sliced carrots and celery, simmering for about 10 minutes until tender.
- Add noodles and follow package instructions, usually 5 to 7 minutes.
- Stir in soy sauce, season with salt and pepper, and mix well.
- Ladle into bowls and garnish with green onions.
Notes
For extra flavor, use homemade chicken broth. You can also add red pepper flakes for a bit of spice. Leftover soup can be stored in the fridge for 3-4 days.
