Description

A cozy and hearty dish combining frozen meatballs with classic pot roast ingredients, perfect for busy weeknights.


Ingredients

  • 1 pound frozen meatballs (beef, turkey, or chicken)
  • 2-3 Yukon Gold potatoes or 2 Russet potatoes, chopped
  • 2-3 carrots, chopped (fresh or frozen)
  • 2 yellow onions, chopped
  • 2 cups beef broth (or vegetable broth)
  • 2 tablespoons cornstarch (or flour)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon Italian seasoning


Instructions

  1. Chop the onions, potatoes, and carrots into rustic, chunky pieces.
  2. Toss the frozen meatballs, chopped onions, potatoes, and carrots into the slow cooker.
  3. Pour in the beef broth and sprinkle the seasonings. Stir to coat evenly.
  4. Cook on low for about 6 hours or on high for about 4 hours.
  5. For thicker gravy, mix cornstarch with a little water in a bowl until smooth, then stir into the pot 30 minutes before serving.
  6. Once done, gently stir, taste, and adjust seasoning as needed before serving warm.

Notes

Serve with crusty bread or a fresh salad for the perfect meal balance. Add fresh parsley for garnish if desired.
