- 1 pound frozen meatballs (beef, turkey, or chicken)
- 2-3 Yukon Gold potatoes or 2 Russet potatoes, chopped
- 2-3 carrots, chopped (fresh or frozen)
- 2 yellow onions, chopped
- 2 cups beef broth (or vegetable broth)
- 2 tablespoons cornstarch (or flour)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
- 1 tablespoon Italian seasoning
Instructions
- Chop the onions, potatoes, and carrots into rustic, chunky pieces.
- Toss the frozen meatballs, chopped onions, potatoes, and carrots into the slow cooker.
- Pour in the beef broth and sprinkle the seasonings. Stir to coat evenly.
- Cook on low for about 6 hours or on high for about 4 hours.
- For thicker gravy, mix cornstarch with a little water in a bowl until smooth, then stir into the pot 30 minutes before serving.
- Once done, gently stir, taste, and adjust seasoning as needed before serving warm.
Notes
Serve with crusty bread or a fresh salad for the perfect meal balance. Add fresh parsley for garnish if desired.
