Description

A delightful fresh cherry pie that captures the essence of summer with sweet, tangy cherries and a flaky crust.


Ingredients

Scale
  • 4 cups fresh cherries, pitted
  • 3/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • Pie crust (store-bought or homemade)
  • 1 egg (for egg wash) mixed with 1 tablespoon of water


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Rinse cherries and remove pits; slice them in half if desired.
  3. In a big mixing bowl, combine cherries, sugar, cornstarch, lemon juice, and vanilla.
  4. Roll out half of the dough and place it in a pie dish.
  5. Spoon the cherry mixture into the crust.
  6. Roll out the second half of the dough and cover the filling; create slits or a lattice if desired.
  7. Brush the top with egg wash and sprinkle sugar.
  8. Bake for 45 to 50 minutes until the crust is golden and filling is bubbling.
  9. Let cool for at least an hour before serving.

Notes

Using ripe cherries will greatly enhance the flavor. Don’t skip the lemon juice, as it balances the sweetness.
