- 4 cups fresh cherries, pitted
- 3/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- Pie crust (store-bought or homemade)
- 1 egg (for egg wash) mixed with 1 tablespoon of water
Instructions
- Preheat the oven to 425°F (220°C).
- Rinse cherries and remove pits; slice them in half if desired.
- In a big mixing bowl, combine cherries, sugar, cornstarch, lemon juice, and vanilla.
- Roll out half of the dough and place it in a pie dish.
- Spoon the cherry mixture into the crust.
- Roll out the second half of the dough and cover the filling; create slits or a lattice if desired.
- Brush the top with egg wash and sprinkle sugar.
- Bake for 45 to 50 minutes until the crust is golden and filling is bubbling.
- Let cool for at least an hour before serving.
Notes
Using ripe cherries will greatly enhance the flavor. Don’t skip the lemon juice, as it balances the sweetness.
