- 1 1/2 cups crushed graham crackers (or Oreo crust)
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 1 cup heavy cream
- 1 tsp pure vanilla extract
- 8 oz high-quality dark chocolate
- 3 large eggs
Instructions
- Preheat your oven to 350°F (175°C). Mix crushed graham crackers with melted butter and press this mixture into the bottom of a pie dish. Bake for 10 minutes and let it cool.
- In a bowl, beat softened cream cheese and sugar until smooth. Add heavy cream and vanilla extract, continuing to beat until fluffy. Set aside.
- Melt the chocolate in a microwave-safe bowl, heating in short intervals and stirring each time. Let it cool slightly before mixing it into your cream cheese mixture.
- Beat in the eggs one at a time until fully incorporated.
- Pour the mixture over the cooled crust. Bake for about 50 minutes or until the center is set but still jiggly.
- Let the cheesecake cool at room temperature, then transfer it to the fridge for at least four hours, preferably overnight.
- Top with whipped cream and chocolate shavings before serving.
