French Onion Chicken Orzo Casserole

Description

A warm and comforting casserole combining tender chicken, savory onions, and orzo pasta in a delicious bake.


Ingredients

  • 2 Boneless, skinless chicken breasts
  • 1 cup Orzo pasta
  • 2 medium Yellow onions, sliced
  • 3 cloves Garlic, minced
  • 3 cups Low-sodium chicken broth
  • 1/2 cup Heavy cream
  • 1 cup Gruyère cheese, shredded
  • 2 tablespoons Olive oil
  • 1 teaspoon Fresh thyme
  • 1 Bay leaf


Instructions

  1. In a large skillet, over medium heat, add olive oil. Once it’s hot, add the sliced onions and a pinch of salt. Stir occasionally until caramelized and golden brown, about 15 minutes.
  2. Add minced garlic and diced chicken breast to the skillet and cook until the chicken is no longer pink, about 6-8 minutes.
  3. Stir in orzo pasta and pour in chicken broth. Add fresh thyme and bay leaf.
  4. Bring to a simmer and cook for about 10 minutes until orzo is tender and creamy. Stir in heavy cream and remove from heat.
  5. Pour the mixture into a greased baking dish and remove the bay leaf.
  6. Sprinkle cheese generously over the casserole and bake in a preheated oven at 350°F (175°C) for about 20 minutes until cheese is bubbly and golden.
  7. Let it cool for a few minutes, serve, and enjoy!

Notes

You can swap ingredients for a more personalized flavor – try adding spinach or mushrooms for extra nutrients or milk instead of cream for a lighter version.
