- 2 Boneless, skinless chicken breasts
- 1 cup Orzo pasta
- 2 medium Yellow onions, sliced
- 3 cloves Garlic, minced
- 3 cups Low-sodium chicken broth
- 1/2 cup Heavy cream
- 1 cup Gruyère cheese, shredded
- 2 tablespoons Olive oil
- 1 teaspoon Fresh thyme
- 1 Bay leaf
Instructions
- In a large skillet, over medium heat, add olive oil. Once it’s hot, add the sliced onions and a pinch of salt. Stir occasionally until caramelized and golden brown, about 15 minutes.
- Add minced garlic and diced chicken breast to the skillet and cook until the chicken is no longer pink, about 6-8 minutes.
- Stir in orzo pasta and pour in chicken broth. Add fresh thyme and bay leaf.
- Bring to a simmer and cook for about 10 minutes until orzo is tender and creamy. Stir in heavy cream and remove from heat.
- Pour the mixture into a greased baking dish and remove the bay leaf.
- Sprinkle cheese generously over the casserole and bake in a preheated oven at 350°F (175°C) for about 20 minutes until cheese is bubbly and golden.
- Let it cool for a few minutes, serve, and enjoy!
Notes
You can swap ingredients for a more personalized flavor – try adding spinach or mushrooms for extra nutrients or milk instead of cream for a lighter version.
