Ingredients

- 2 ½ cups all-purpose flour (or gluten-free flour blend)
- 1 tsp baking soda
- ½ tsp salt
- 1 cup unsalted butter, softened (or coconut oil)
- 1 cup granulated sugar (or brown sugar)
- 2 tsp cotton candy flavored extract
- 1 large egg (or flax egg)
- ½ cup sprinkles (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine flour, baking soda, and salt; whisk and set aside.
- In a separate bowl, cream the softened butter and granulated sugar until light and fluffy (2-3 minutes).
- Add the egg and cotton candy extract; mix until well combined.
- Slowly add the dry mixture to the wet ingredients and combine until no dry flour is visible.
- If using sprinkles, gently fold them in.
- Using a cookie scoop, drop the dough onto a lined baking sheet, leaving space between each mound.
- Bake for 10-12 minutes until edges are set but the center is soft.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.

For best results, use room temperature ingredients and don’t overbake. Store in an airtight container for up to a week.
