Description

Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tbsp sugar
  • 1/2 cup milk
  • 1 tsp vanilla extract


Instructions

  1. In a large bowl, combine cottage cheese, eggs, milk, and vanilla extract. Mix until blended, but don’t overmix!
  2. In a separate bowl, whisk together flour, baking powder, and sugar.
  3. Gently fold the dry ingredients into the wet mixture; a few lumps are fine.
  4. Preheat a non-stick skillet over medium heat with a bit of oil or butter.
  5. Pour 1/4 cup of batter per pancake onto the skillet. Cook for 2-3 minutes until bubbles form; flip and cook until golden brown.
  6. Serve warm with your favorite toppings.

Notes
