Description

A creative and fun way to enjoy a classic breakfast with crispy hash brown nests filled with baked eggs.


Ingredients

Scale
  • 2 cups hash browns (fresh or frozen)
  • 4 large eggs
  • 1 cup shredded cheese (sharp cheddar, mozzarella, or feta)
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons olive oil or butter (for greasing)
  • Optional: bell peppers, spinach, or green onions


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix hash browns with salt, pepper, and a splash of olive oil.
  3. Grease a muffin tin with olive oil or butter.
  4. Pack the hash browns into the muffin cups to form nests.
  5. Bake for 20-25 minutes until golden brown and crispy.
  6. Crack an egg into each nest and sprinkle with salt and pepper.
  7. Bake for an additional 10-15 minutes until egg whites are set.
  8. In the last minute, sprinkle cheese on top to melt.
  9. Let cool briefly, then remove from tin and serve warm.
