- 1 ¾ cups all-purpose flour
- ½ cup powdered sugar
- ½ cup unsalted butter, cold and cubed
- 2 large eggs
- 1 cup heavy cream
- 1 cup eggnog
- ½ tsp nutmeg
- ½ tsp cinnamon
- ¾ cup granulated sugar (plus extra for caramel)
- 2 tbsp water (for caramel)
Instructions
- Prepare the tart crust: Preheat oven to 350°F (175°C). In a bowl, mix flour and powdered sugar. Cut in butter until crumbly, add cold water to form dough. Press into tart pan, bake for 15 minutes until golden. Cool.
- Make the eggnog filling: Heat heavy cream in a saucepan. Whisk in eggnog, sugar, nutmeg, and cinnamon. Beat eggs separately, add some warm cream to temper, then whisk back. Cook until thickened.
- Assemble the tart: Pour filling into the cooled crust, smooth the top, and chill in the fridge for at least 240 minutes or until set.
- Create caramel shards: Combine sugar and water in a saucepan. Heat until bubbling and golden brown. Pour onto parchment and cool. Break into shards.
- Finish and serve: Top the set tart with caramel shards, slice, and serve.
Notes
Chill the tart thoroughly and keep an eye on the caramel while it cooks to avoid burning. Experiment with flavors by adding rum or bourbon to the filling.
