- Turkey drippings
- 1/4 cup all-purpose flour (or cornstarch for gluten-free)
- 2 cups chicken or turkey broth
- 1/4 cup butter
- Salt to taste
- Pepper to taste
- Optional herbs (fresh thyme or rosemary)
Instructions
- Collect your drippings from the roasted turkey.
- Skim off the excess fat, saving about 1/4 cup.
- In a saucepan over medium heat, melt the butter and sprinkle in the flour, stirring constantly for 2-3 minutes.
- Slowly whisk the broth into the roux, adding in your reserved turkey drippings.
- Season with salt, pepper, and optional herbs, and simmer for 5-10 minutes until thickened.
- Taste and adjust seasonings before serving over your turkey and sides.
Notes
Whisk constantly to avoid lumps. Adjust consistency by adding more broth if too thick.
