Description

Ingredients

  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 4 cups fresh baby spinach
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Parmesan cheese (optional)
  • Salt and pepper, to taste
  • 1 tsp Italian herbs
  • 1/2 tsp red pepper flakes (optional)


Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced chicken, season with salt, pepper, and Italian herbs, and cook until browned and cooked through (5-7 minutes).
  2. Stir in minced garlic and cook for another minute until fragrant.
  3. Add orzo pasta and stir to combine with the chicken.
  4. Pour in chicken broth and bring to a boil. Reduce heat and simmer until orzo is al dente (10-12 minutes), stirring occasionally.
  5. Fold in baby spinach and halved cherry tomatoes, cooking for an additional 2-3 minutes until spinach wilts and tomatoes soften.
  6. If desired, stir in grated Parmesan cheese and adjust seasonings to taste.
  7. Serve warm in bowls and enjoy!
