- 1 cup orzo pasta
- 4 cups chicken broth

- 4 cups fresh baby spinach
- 1 cup cherry tomatoes, halved
- 1/2 cup Parmesan cheese (optional)
- Salt and pepper, to taste
- 1 tsp Italian herbs
- 1/2 tsp red pepper flakes (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add diced chicken, season with salt, pepper, and Italian herbs, and cook until browned and cooked through (5-7 minutes).
- Stir in minced garlic and cook for another minute until fragrant.
- Add orzo pasta and stir to combine with the chicken.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer until orzo is al dente (10-12 minutes), stirring occasionally.
- Fold in baby spinach and halved cherry tomatoes, cooking for an additional 2-3 minutes until spinach wilts and tomatoes soften.
- If desired, stir in grated Parmesan cheese and adjust seasonings to taste.
- Serve warm in bowls and enjoy!
