Description

A delightful blend of flaky gluten-free pastry and a creamy spinach filling, perfect as an appetizer or snack.


Ingredients

  • Gluten-Free Pastry Sheets
  • Fresh Spinach
  • Feta Cheese
  • Ricotta Cheese
  • Egg
  • Oregano
  • Salt
  • Pepper


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the fresh spinach in a pan over medium heat until wilted, then cool and drain excess moisture.
  3. In a bowl, mix the sautéed spinach with feta cheese, ricotta cheese, egg, oregano, salt, and pepper.
  4. Roll out the gluten-free pastry and cut it into 4-6 inch squares or circles.
  5. Spoon the spinach filling into the center of each pastry piece.
  6. Fold the pastry over the filling and seal the edges firmly.
  7. Place on a parchment-lined baking sheet, brush with melted butter or an egg wash, and bake for 20-25 minutes until golden and crispy.
  8. Allow to cool for a few minutes before serving.

Notes

Make sure spinach is well-drained to avoid sogginess. You can freeze the parcels before or after baking.
