Ingredients
- Gluten-Free Pastry Sheets
- Fresh Spinach
- Feta Cheese
- Ricotta Cheese
- Egg
- Oregano
- Salt
- Pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Sauté the fresh spinach in a pan over medium heat until wilted, then cool and drain excess moisture.
- In a bowl, mix the sautéed spinach with feta cheese, ricotta cheese, egg, oregano, salt, and pepper.
- Roll out the gluten-free pastry and cut it into 4-6 inch squares or circles.
- Spoon the spinach filling into the center of each pastry piece.
- Fold the pastry over the filling and seal the edges firmly.
- Place on a parchment-lined baking sheet, brush with melted butter or an egg wash, and bake for 20-25 minutes until golden and crispy.
- Allow to cool for a few minutes before serving.
Notes
Make sure spinach is well-drained to avoid sogginess. You can freeze the parcels before or after baking.
