Description

A comforting and flavorful casserole made with eggs, spinach, and feta cheese, perfect for any meal of the day.


Ingredients

Scale
  • 6 Eggs
  • 2 cups Fresh Spinach (or 1 cup frozen)
  • 1 cup Feta Cheese, crumbled
  • 1/2 cup Milk (or non-dairy milk)
  • 1 small Onion, finely chopped
  • 2 cloves Garlic, minced
  • Salt and Pepper to taste
  • Olive Oil for sautéing


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, drizzle olive oil and sauté the chopped onion over medium heat for 3-4 minutes until softened. Add the spinach and cook until wilted.
  3. In a large bowl, whisk together the eggs and milk until combined and fluffy.
  4. Add the sautéed onion and spinach to the egg mixture along with the crumbled feta. Season with salt and pepper and gently stir to combine.
  5. Pour the mixture into a greased baking dish and bake for 30-35 minutes until the top is golden and the casserole is set in the middle.

Notes

Leftovers can be stored in the fridge for up to 3 days. Perfect for meal prep and can be frozen after cooling.
