- 6 Eggs
- 2 cups Fresh Spinach (or 1 cup frozen)
- 1 cup Feta Cheese, crumbled
- 1/2 cup Milk (or non-dairy milk)
- 1 small Onion, finely chopped
- 2 cloves Garlic, minced
- Salt and Pepper to taste
- Olive Oil for sautéing
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, drizzle olive oil and sauté the chopped onion over medium heat for 3-4 minutes until softened. Add the spinach and cook until wilted.
- In a large bowl, whisk together the eggs and milk until combined and fluffy.
- Add the sautéed onion and spinach to the egg mixture along with the crumbled feta. Season with salt and pepper and gently stir to combine.
- Pour the mixture into a greased baking dish and bake for 30-35 minutes until the top is golden and the casserole is set in the middle.
Notes
Leftovers can be stored in the fridge for up to 3 days. Perfect for meal prep and can be frozen after cooling.
