Description

A warm and hearty one-pot meal featuring tender chicken, fresh broccoli, fluffy rice, and gooey cheese, all prepared effortlessly in a crockpot.


Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1 cup long-grain white rice (or brown rice)
  • 2 cups fresh or frozen broccoli
  • 1 can cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 medium onion, chopped
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 cups water or chicken broth


Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. In a bowl, combine the cream of chicken soup, garlic powder, salt, and pepper.
  3. Pour the soup mixture evenly over the chicken.
  4. Sprinkle the rice on top of the chicken and soup mixture without stirring.
  5. Add the broccoli on top, spreading it out evenly.
  6. Pour enough water or chicken broth to cover the rice.
  7. Set the crockpot to low and cook for 6-7 hours or 3-4 hours on high.
  8. When close to being done, sprinkle in the shredded cheddar cheese and let it melt before serving.

Notes

Let the dish rest for a few minutes before serving to help the flavors settle in.
