Description
A warm and hearty one-pot meal featuring tender chicken, fresh broccoli, fluffy rice, and gooey cheese, all prepared effortlessly in a crockpot.
Ingredients

- 2 boneless, skinless chicken breasts
- 1 cup long-grain white rice (or brown rice)
- 2 cups fresh or frozen broccoli
- 1 can cream of chicken soup
- 1 cup shredded cheddar cheese
- 1 medium onion, chopped
- 1 tsp garlic powder
- Salt and pepper to taste
- 2 cups water or chicken broth
Instructions
- Place the chicken breasts at the bottom of the crockpot.
- In a bowl, combine the cream of chicken soup, garlic powder, salt, and pepper.
- Pour the soup mixture evenly over the chicken.
- Sprinkle the rice on top of the chicken and soup mixture without stirring.
- Add the broccoli on top, spreading it out evenly.
- Pour enough water or chicken broth to cover the rice.
- Set the crockpot to low and cook for 6-7 hours or 3-4 hours on high.
- When close to being done, sprinkle in the shredded cheddar cheese and let it melt before serving.
Notes
Let the dish rest for a few minutes before serving to help the flavors settle in.
