- 1 cup all-purpose flour
- 1/2 cup unsalted butter (melted)
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups fresh or frozen cherries (pitted)
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1/4 teaspoon almond extract (optional)
- 1/2 cup rolled oats
- 1/4 cup brown sugar
- 1/4 teaspoon cinnamon
- 1 tablespoon melted butter
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 baking dish with parchment paper.
- In a mixing bowl, combine flour, melted butter, granulated sugar, vanilla extract, and salt until you have a crumbly dough.
- Press the dough into the bottom of the lined baking dish to form an even base.
- In a saucepan over medium heat, combine cherries, granulated sugar, cornstarch, lemon juice, and almond extract. Stir gently until the mixture bubbles and thickens, about 5-7 minutes.
- Pour the cherry mixture over the prepared crust and spread it evenly.
- In a separate bowl, toss together oats, brown sugar, cinnamon, and melted butter for the topping. Sprinkle over the cherry layer.
- Bake for 30-35 minutes until the topping is golden brown and the cherry filling is bubbly.
- Let cool completely in the pan before slicing into squares.
