Description

A fluffy, moist cake layered with a sweet, creamy filling reminiscent of traditional cannoli, featuring ricotta cheese, mini chocolate chips, and zesty orange.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 3 large eggs
  • 1 cup milk
  • 15 oz ricotta cheese
  • 1 cup powdered sugar
  • 1 cup mini chocolate chips
  • 2 tsp vanilla extract
  • Zest of 1 orange


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease two round cake pans with butter and dust with flour.
  3. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  4. In a large bowl, beat together granulated sugar and eggs until creamy and light.
  5. Add milk and vanilla extract; stir to combine.
  6. Gradually mix in the dry ingredients until just combined.
  7. Fold in ricotta, orange zest, and mini chocolate chips until incorporated.
  8. Pour batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  9. Cool in pans briefly, then transfer to a wire rack to cool completely.
  10. Beat powdered sugar and ricotta until smooth; spread filling between layers and on top of the cake.
