Description

A delightful dish rooted in Indian cuisine, easy baked tandoori chicken is marinated in spices and yogurt, baked to juicy perfection.

Ingredients

Scale
  • 4-6 chicken pieces (drumsticks or thighs)
  • 1 cup plain yogurt (or coconut yogurt)
  • 2 tbsp garlic and ginger paste
  • 2 tbsp tandoori masala (or a mix of cumin, paprika, and coriander)
  • 2 tbsp lemon juice
  • 1 tsp salt
  • 1-2 tbsp cooking oil
  • Fresh cilantro (for garnish, optional)

Instructions

  1. In a bowl, combine yogurt, garlic and ginger paste, tandoori masala, lemon juice, and salt. Add chicken pieces and coat them well. Cover and marinate for at least 1 hour or overnight in the fridge.
  2. Preheat the oven to 425°F (220°C).
  3. Line a baking sheet with foil or parchment paper and place a wire rack on top.
  4. Arrange the marinated chicken on the rack and drizzle with oil.
  5. Bake for 25-30 minutes, turning halfway through, until golden brown and cooked through.
  6. Garnish with fresh cilantro and let rest before serving.

Notes

For best flavor, marinate overnight. Use a meat thermometer to check for doneness at 165°F (75°C). Let rest after baking.
