- Corn or flour tortillas
- 2 cups shredded chicken (preferably rotisserie)
- 4 oz cream cheese
- 1 cup shredded cheese (Cheddar or Monterey Jack)
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp chili powder
- Cooking spray
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, combine the shredded chicken, cream cheese, shredded cheese, and spices. Stir until well mixed.
- Warm tortillas in the microwave for about 30 seconds.
- Place a small amount of filling in the center of each tortilla, then roll them up tightly but gently.
- Place the taquitos seam-side down on a baking sheet and spritz with cooking spray.
- Bake for about 20 minutes or until golden and crunchy.
- Let cool for a minute before serving with salsa, guacamole, or sour cream.
Notes
Use warm tortillas for easier rolling and don’t overfill to avoid messy taquitos.
