Description

Crispy rolled tortillas stuffed with shredded chicken, cheese, and spices, baked to perfection for a quick and tasty meal.


Ingredients

  • Corn or flour tortillas
  • 2 cups shredded chicken (preferably rotisserie)
  • 4 oz cream cheese
  • 1 cup shredded cheese (Cheddar or Monterey Jack)
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • Cooking spray


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, combine the shredded chicken, cream cheese, shredded cheese, and spices. Stir until well mixed.
  3. Warm tortillas in the microwave for about 30 seconds.
  4. Place a small amount of filling in the center of each tortilla, then roll them up tightly but gently.
  5. Place the taquitos seam-side down on a baking sheet and spritz with cooking spray.
  6. Bake for about 20 minutes or until golden and crunchy.
  7. Let cool for a minute before serving with salsa, guacamole, or sour cream.

Notes

Use warm tortillas for easier rolling and don’t overfill to avoid messy taquitos.
