Ingredients

  • 2 cups fresh basil leaves
  • 2 cloves garlic
  • 1/4 cup pine nuts
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup extra virgin olive oil
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. Wash the basil leaves thoroughly and pat them dry.
  2. Peel the garlic cloves.
  3. In a food processor or blender, add the basil, garlic, pine nuts, and a pinch of salt. Blend until minced.
  4. While blending, slowly drizzle in the olive oil to create a creamy texture.
  5. Add the grated Parmesan cheese and blend until mixed. Adjust with more olive oil for a smoother pesto if desired.
  6. Taste and adjust seasoning with salt and pepper.
  7. Use immediately or store in a jar, drizzled with olive oil on top to keep it fresh in the fridge for up to a week.
