Description

Rich and chewy cookies loaded with chocolate chunks and a refreshing hint of peppermint, perfect for gatherings or cozy nights.


Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup chocolate chips
  • 1 tsp peppermint extract
  • 1/2 cup crushed peppermint candies


Instructions

  1. Preheat the oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a separate bowl, beat the softened butter with brown sugar and granulated sugar until fluffy.
  4. Mix in the eggs one at a time, then add the vanilla extract.
  5. Slowly add the dry ingredients to the butter mixture. Stir in the chocolate chips and peppermint extract until just combined.
  6. Drop spoonfuls of the cookie dough onto the prepared baking sheets, and sprinkle with crushed peppermint on top.
  7. Bake for 10–12 minutes, until they look slightly soft.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Chill the dough for 30 minutes to enhance flavors and ease scooping.
