Description

A delightful twist on chicken dinners with the tangy flavor of dill pickles and a crispy parmesan topping.


Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup dill pickles, sliced
  • 1 cup freshly grated parmesan cheese
  • 1 cup breadcrumbs (plain or seasoned)
  • 2 eggs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Beat the eggs in a bowl until combined.
  4. In another bowl, mix breadcrumbs, parmesan cheese, garlic powder, salt, and pepper.
  5. Dip each chicken breast in the egg and let excess drip off.
  6. Coat the chicken with the breadcrumb mixture, pressing it in well.
  7. Place dill pickle slices on top of each chicken breast.
  8. Arrange the chicken on a greased baking sheet.
  9. Drizzle with olive oil.
  10. Bake for 25-30 minutes until golden and cooked through.
