- 4 boneless skinless chicken breasts
- 1 cup dill pickles, sliced
- 1 cup freshly grated parmesan cheese
- 1 cup breadcrumbs (plain or seasoned)
- 2 eggs
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken breasts with salt and pepper on both sides.
- Beat the eggs in a bowl until combined.
- In another bowl, mix breadcrumbs, parmesan cheese, garlic powder, salt, and pepper.
- Dip each chicken breast in the egg and let excess drip off.
- Coat the chicken with the breadcrumb mixture, pressing it in well.
- Place dill pickle slices on top of each chicken breast.
- Arrange the chicken on a greased baking sheet.
- Drizzle with olive oil.
- Bake for 25-30 minutes until golden and cooked through.
