Description

Delightful dumplings filled with fresh spinach and crunchy walnuts, perfect for a quick meal or an elegant dinner.


Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup walnuts, finely chopped
  • 1 cup all-purpose flour (or rice flour for gluten-free)
  • 1 cup ricotta cheese (or cottage cheese)
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for sautéing


Instructions

  1. In a pan, heat some olive oil over medium heat. Add the chopped spinach and sauté for about 2-3 minutes until it’s wilted.
  2. In a bowl, combine the sautéed spinach, finely chopped walnuts, ricotta cheese, and minced garlic. Season with salt and pepper, and stir until everything’s nicely blended.
  3. Gradually add the flour to the mixture until the dough holds together but isn’t sticky.
  4. Roll small balls or patties from the mixture. Make them any size you like.
  5. Cook the dumplings by boiling in salted water for 5-7 minutes or pan-frying until golden brown and crispy.

Notes

Don’t skip the seasoning; fresh spinach makes a big difference. You can make these dumplings vegan by using vegan ricotta.
