- 2 cups fresh spinach, chopped
- 1 cup walnuts, finely chopped
- 1 cup all-purpose flour (or rice flour for gluten-free)
- 1 cup ricotta cheese (or cottage cheese)
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a pan, heat some olive oil over medium heat. Add the chopped spinach and sauté for about 2-3 minutes until it’s wilted.
- In a bowl, combine the sautéed spinach, finely chopped walnuts, ricotta cheese, and minced garlic. Season with salt and pepper, and stir until everything’s nicely blended.
- Gradually add the flour to the mixture until the dough holds together but isn’t sticky.
- Roll small balls or patties from the mixture. Make them any size you like.
- Cook the dumplings by boiling in salted water for 5-7 minutes or pan-frying until golden brown and crispy.
Notes
Don’t skip the seasoning; fresh spinach makes a big difference. You can make these dumplings vegan by using vegan ricotta.
