- 8 oz pasta (rotini or penne)
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1 bell pepper, chopped
- 1 small red onion, finely chopped
- 1/2 cup olives, sliced (Kalamata or green)
- 1 cup feta cheese, crumbled
- 1/2 cup Italian dressing (homemade or store-bought)
- Fresh herbs (parsley or basil), chopped
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions until al dente. Drain and rinse under cool water.
- Chop the cherry tomatoes, cucumber, bell pepper, and red onion.
- In a large bowl, combine the cooled pasta, chopped veggies, olives, and feta cheese.
- Pour the Italian dressing over the mixture and stir gently to coat everything.
- Add fresh herbs, salt, and pepper to taste, then stir again to mix.
- Chill it in the fridge for at least 30 minutes before serving.
