Description

A comforting tomato soup paired with fluffy cheese dumplings, perfect for cozy evenings.


Ingredients

  • 1 can Canned Tomatoes
  • 4 cups Vegetable Broth
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 tbsp Olive Oil
  • 1 cup Cream
  • 1 cup Cheddar Cheese, shredded
  • 1 cup Flour
  • 2 tsp Baking Powder
  • 1/4 cup Parsley, chopped


Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onions until soft and translucent, then add garlic until fragrant.
  2. Pour in canned tomatoes and vegetable broth, then simmer for about 15 minutes.
  3. Blend the soup until smooth, return to pot, stir in cream, and season with salt and pepper.
  4. In a separate bowl, mix flour, baking powder, cheese, and salt. Gradually add milk to form a soft dough.
  5. Drop spoonfuls of dumpling mixture into simmering soup, cover, and let steam for 10 to 12 minutes until fluffy.
  6. Ladle into bowls, garnish with parsley, and serve hot.

Notes

Pair with crusty bread or garlic bread for a complete meal. Add red pepper flakes for a spicy kick!
