- 1 can Canned Tomatoes
- 4 cups Vegetable Broth
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 2 tbsp Olive Oil
- 1 cup Cream
- 1 cup Cheddar Cheese, shredded
- 1 cup Flour
- 2 tsp Baking Powder
- 1/4 cup Parsley, chopped
Instructions
- In a large pot, heat olive oil over medium heat. Sauté onions until soft and translucent, then add garlic until fragrant.
- Pour in canned tomatoes and vegetable broth, then simmer for about 15 minutes.
- Blend the soup until smooth, return to pot, stir in cream, and season with salt and pepper.
- In a separate bowl, mix flour, baking powder, cheese, and salt. Gradually add milk to form a soft dough.
- Drop spoonfuls of dumpling mixture into simmering soup, cover, and let steam for 10 to 12 minutes until fluffy.
- Ladle into bowls, garnish with parsley, and serve hot.
Notes
