Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until fully incorporated.
- In another bowl, whisk together the flour, baking powder, and salt.
- Scoop about a tablespoon of dough, flatten it, and place a dollop of strawberry jam in the center.
- Cover it with another flattened piece of dough and seal the edges.
- Chill the shaped cookies in the refrigerator for 15-20 minutes.
- Place them on a baking sheet lined with parchment paper and bake for 10-12 minutes until the edges start to turn golden.
- Let the cookies cool completely before drizzling with icing made from powdered sugar and milk.
