Description

A vibrant and healthy side dish featuring roasted broccoli and sweet potatoes, perfect for any meal.


Ingredients

  • 2 cups broccoli florets
  • 2 medium sweet potatoes, peeled and cubed
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Optional seasonings: paprika or cumin


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and cut broccoli into florets and sweet potatoes into 1-inch cubes.
  3. In a large bowl, combine broccoli and sweet potatoes with olive oil, garlic powder, salt, and pepper. Mix well.
  4. Line a baking sheet with parchment paper and spread the veggies in a single layer.
  5. Roast in the oven for 25-30 minutes, stirring halfway through.
  6. Remove from oven, let cool for a minute, and serve.

Notes

Don’t crowd the pan for optimal roasting. Experiment with spices and enjoy leftovers in salads or grain bowls.
