- 2 cups broccoli florets
- 2 medium sweet potatoes, peeled and cubed
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- Optional seasonings: paprika or cumin
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and cut broccoli into florets and sweet potatoes into 1-inch cubes.
- In a large bowl, combine broccoli and sweet potatoes with olive oil, garlic powder, salt, and pepper. Mix well.
- Line a baking sheet with parchment paper and spread the veggies in a single layer.
- Roast in the oven for 25-30 minutes, stirring halfway through.
- Remove from oven, let cool for a minute, and serve.
Notes
