- 12 oz cheese tortellini
- 1 lb sliced ribeye beef (or ground beef)
- 1 cup bell peppers (mixed green and red)
- 1 cup sweet onion
- 8 oz cream cheese
- 1 cup shredded provolone or cheddar cheese
- 1 tsp garlic powder
- Salt to taste
- Pepper to taste
- 2 tbsp olive oil
Instructions
- Cook the tortellini according to the package instructions, drain and set aside.
- In a skillet, heat olive oil over medium heat and add onions and bell peppers, sauté until soft.
- Add sliced beef, cook until browned, seasoning with salt, pepper, and garlic powder.
- Stir in cream cheese until melted, then mix in half of the shredded cheese.
- Gently fold in the cooked tortellini, ensuring it is well-coated with the sauce.
- Warm everything together for a few minutes, then top with remaining shredded cheese.
- Optionally, broil for a couple of minutes to get bubbly cheese on top.
- Serve and enjoy with a side salad or garlic bread.
Notes
For a vegetarian option, swap beef for plant-based protein or add more veggies. You can also add a splash of heavy cream for a thicker sauce.
