Description

A comforting and hearty dish that combines the flavors of a classic cheese steak with delightful cheese tortellini in a creamy sauce.


Ingredients

  • 12 oz cheese tortellini
  • 1 lb sliced ribeye beef (or ground beef)
  • 1 cup bell peppers (mixed green and red)
  • 1 cup sweet onion
  • 8 oz cream cheese
  • 1 cup shredded provolone or cheddar cheese
  • 1 tsp garlic powder
  • Salt to taste
  • Pepper to taste
  • 2 tbsp olive oil


Instructions

  1. Cook the tortellini according to the package instructions, drain and set aside.
  2. In a skillet, heat olive oil over medium heat and add onions and bell peppers, sauté until soft.
  3. Add sliced beef, cook until browned, seasoning with salt, pepper, and garlic powder.
  4. Stir in cream cheese until melted, then mix in half of the shredded cheese.
  5. Gently fold in the cooked tortellini, ensuring it is well-coated with the sauce.
  6. Warm everything together for a few minutes, then top with remaining shredded cheese.
  7. Optionally, broil for a couple of minutes to get bubbly cheese on top.
  8. Serve and enjoy with a side salad or garlic bread.

Notes

For a vegetarian option, swap beef for plant-based protein or add more veggies. You can also add a splash of heavy cream for a thicker sauce.
