Description

Delicious honey cornbread cookies with a unique sweetness that transforms a traditional dish into a perfect dessert.


Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup honey
  • 1/2 cup milk


Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, combine cornmeal, all-purpose flour, baking powder, and salt. Whisk until mixed well.
  3. In another bowl, cream together unsalted butter and granulated sugar until light and fluffy.
  4. Beat in eggs one at a time. Mix in the honey until blended.
  5. Gradually add the dry mixture to the wet ingredients, alternating with milk, until just combined.
  6. Scoop tablespoon-sized balls of dough onto prepared baking sheets, spacing them apart.
  7. Bake for 10-12 minutes or until the edges are golden.
  8. Allow to cool on the baking sheet for a couple of minutes, then transfer to a wire rack.

Notes

For best results, use room temperature ingredients and consider chilling the dough for 30 minutes before baking.
