- 1 lb ground beef
- 1 cup brown rice
- 1 can black beans, drained and rinsed
- 1 cup bell peppers, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1 cup corn (fresh or frozen)
- Toppings: sour cream, cheese, avocado, cilantro
Instructions
- Cook the brown rice according to package directions. Set aside.
- In a large skillet, heat over medium-high heat, add the ground beef, and cook until browned. Drain excess fat if necessary.
- Add chopped onions and bell peppers to the skillet, and sauté until they soften, about 5 minutes.
- Stir in minced garlic, cumin, chili powder, and salt, and cook for about a minute until fragrant.
- Mix in black beans and corn, stirring gently to combine and heat through.
- Assemble the bowls by starting with a base of rice, then topping with the beef and veggie mixture. Finish with your choice of toppings.
