Description

A vibrant bowl filled with juicy meatballs, fresh veggies, and crumbled feta, perfect for a hearty yet refreshing meal.


Ingredients

  • 1 lb ground meat (beef, lamb, or turkey)
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh mint, chopped
  • 1/2 cup breadcrumbs (or oats for gluten-free)
  • 1 egg (or flax egg for vegan)
  • 4 cloves garlic, minced
  • 1 onion, finely chopped
  • 1 cucumber, diced
  • 1 cup tomatoes, cherry or diced
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together ground meat, breadcrumbs, fresh herbs, minced garlic, onion, egg, salt, and pepper.
  3. Roll the mixture into small meatballs and place them onto a baking sheet.
  4. Bake the meatballs for about 20-25 minutes until cooked through and golden brown.
  5. Chop cucumbers and tomatoes; toss together with olive oil, lemon juice, salt, and pepper.
  6. Start with a base of grains on your plate, layer the cooked meatballs and salad on top, and sprinkle with feta.
  7. Drizzle more lemon juice over the top and serve.

Notes

Use fresh herbs for the best flavor. You can prepare the meatball mixture a day ahead and refrigerate.
