- 1 lb ground meat (beef, lamb, or turkey)
- 1/4 cup fresh parsley, chopped
- 2 tbsp fresh mint, chopped
- 1/2 cup breadcrumbs (or oats for gluten-free)
- 1 egg (or flax egg for vegan)
- 4 cloves garlic, minced
- 1 onion, finely chopped
- 1 cucumber, diced
- 1 cup tomatoes, cherry or diced
- 1/2 cup feta cheese, crumbled
- 2 tbsp lemon juice
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix together ground meat, breadcrumbs, fresh herbs, minced garlic, onion, egg, salt, and pepper.
- Roll the mixture into small meatballs and place them onto a baking sheet.
- Bake the meatballs for about 20-25 minutes until cooked through and golden brown.
- Chop cucumbers and tomatoes; toss together with olive oil, lemon juice, salt, and pepper.
- Start with a base of grains on your plate, layer the cooked meatballs and salad on top, and sprinkle with feta.
- Drizzle more lemon juice over the top and serve.
Notes
Use fresh herbs for the best flavor. You can prepare the meatball mixture a day ahead and refrigerate.
