- 1 cup dried or 2 cans black-eyed peas
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- Salt, to taste
- Pepper, to taste
- Optional: diced tomatoes or green peppers
Instructions
- If using dried black-eyed peas, soak them in water overnight or for at least 6 hours. Drain. If using canned, rinse them in a colander and set aside.
- In a large pot, heat olive oil over medium heat. Add chopped onion and sauté for about 5 minutes until translucent.
- Stir in minced garlic and cook for about 1 minute until fragrant.
- Add the soaked or drained black-eyed peas to the pot, followed by broth. Bring to a gentle boil.
- Season with salt and pepper to taste. Optional: add cayenne or cumin for extra flavor.
- Reduce heat, cover, and let simmer: 30 minutes for dried peas or 10 minutes for canned, until tender.
- Taste and adjust seasonings before serving. Serve hot, garnished with fresh herbs or a squeeze of lemon.
Notes
Make sure to soak dried peas ahead of time for better texture. This dish can be made ahead and reheated for lunch or dinner.
