- 4 cups all-purpose flour (or whole wheat flour)
- 2 1/4 teaspoons active dry yeast
- 1/2 cup sugar (brown sugar is optional)
- 1 cup milk (dairy or non-dairy)
- 1/4 cup butter (softened or coconut oil for dairy-free)
- 1 large egg
- 1/2 teaspoon salt
- 2 tablespoons cinnamon
- 1 cup powdered sugar (for glaze)
Instructions
- Prepare the dough: Mix warm milk with yeast and sugar in a bowl; let sit for about 10 minutes until frothy. In another bowl, mash bananas, mix with melted butter and egg. Combine everything with flour and salt.
- Knead the dough: Turn out dough onto a floured surface and knead for 6-8 minutes until smooth.
- First rise: Place dough in an oiled bowl, cover, and let rise in a warm place until doubles in size (about 1 hour).
- Make the filling: Mix cinnamon and optional brown sugar in a bowl; add walnuts or raisins if desired.
- Roll it out: Roll risen dough into a rectangle, spread with butter, sprinkle with cinnamon mixture, and roll tightly.
- Cut into rolls: Slice rolled dough into 1.5-inch thick pieces and place in greased baking dish.
- Second rise: Cover and let rolls rise for another 30 minutes.
- Bake: Preheat oven to 350°F (175°C) and bake rolls for 25-30 minutes until golden brown.
- Make the glaze: Whisk powdered sugar with a splash of milk until smooth and drizzle over warm rolls.
Notes
For the best flavor, use very ripe bananas. Kneading is crucial for fluffy rolls, and find a warm spot for dough rising.
