Ingredients

  • ½ cup unsalted butter, melted (or coconut oil for a dairy-free option)
  • 2 tablespoons sugar (brown sugar adds a caramel-like flavor)
  • 1 cup peanut butter (smooth or crunchy)
  • 1 ½ cups powdered sugar
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened (or vegan cream cheese alternative)
  • 1 cup heavy cream (or coconut cream for a dairy-free version)
  • ½ cup chocolate chips (dark or milk chocolate)
  • 2 tablespoons peanut butter (for topping)


Instructions

  1. Combine graham cracker crumbs, melted butter, and sugar in a mixing bowl; press into a pie dish and refrigerate.
  2. In another bowl, whip cream cheese and peanut butter until smooth, then add powdered sugar and vanilla extract.
  3. In yet another bowl, beat heavy cream until stiff peaks form and fold into peanut butter mixture.
  4. Pour filling into chilled crust and smooth the top.
  5. Melt chocolate chips with peanut butter in the microwave, then drizzle over pie.
  6. Chill for a few hours to allow flavors to meld and filling to set.

Notes

Best made a day in advance for optimal flavor. Customize with crushed peanuts or swap half the peanut butter for Nutella.
