A decadent dessert featuring a light raspberry mousse atop a rich chocolate cake, perfect for celebrations.

- 8 oz Dark Chocolate
- 1 cup Heavy Cream
- 4 Eggs
- 1 cup Granulated Sugar
- 1/2 cup Butter
- 1 cup Raspberries
- 1 tsp Vanilla Extract
- 1 cup All-purpose Flour
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch cake pans. Melt the dark chocolate and let it cool.
- In a bowl, combine the butter and sugar until fluffy. Add in the eggs, one at a time, followed by melted chocolate and vanilla. Gradually mix in the flour until just combined.
- Divide the batter between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted comes out clean. Let them cool completely.
- In a separate bowl, whip the heavy cream until soft peaks form. Fold in the cooled melted chocolate until well combined.
- Once the cakes have cooled, layer them with the raspberry mousse in between and on top. Decorate with fresh raspberries and a dusting of cocoa powder if desired.
- Allow the cake to chill in the fridge for a bit before slicing to ensure it sets nicely. Serve with extra raspberries if you like!
Notes
For a gluten-free version, use a gluten-free flour blend. Allow plenty of chilling time for the mousse.
