Description

Irresistible layered cookies with a buttery base and rich chocolate flavor, perfect for any occasion.


Ingredients

  • 2 cups All-Purpose Flour (or gluten-free flour)
  • 1 cup Granulated Sugar (or brown sugar)
  • 1/2 cup Unsalted Butter, softened (or margarine)
  • 2 Eggs (or flaxseed meal with water as a vegan substitute)
  • 1/2 cup Unsweetened Cocoa Powder
  • 1 teaspoon Baking Powder (or baking soda)
  • 1 cup Chocolate Chips (or white/dark chocolate chips)
  • 1/2 cup Nuts, chopped (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, cocoa powder, and baking powder. Set aside.
  3. Cream the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs, one at a time, ensuring each is well incorporated.
  5. Gradually mix in the dry ingredients until just combined.
  6. Fold in the chocolate chips and nuts if using.
  7. Use a cookie scoop to place spoonfuls of dough onto a lined baking sheet, leaving space in between.
  8. Bake for 10-12 minutes, until edges are set.
  9. Cool on the baking sheet for a couple of minutes, then transfer to wire racks to cool completely.

Notes

For a variation, try mixing in some orange zest for added flavor. Store cookies in an airtight container at room temperature for up to a week.
