Description

A refreshing Cucumber Crab Salad featuring fresh cucumbers, tender crab meat, and a tangy dressing, perfect for summer gatherings.


Ingredients

  • 2 fresh cucumbers, sliced
  • 1 cup crab meat (fresh or canned)
  • 1/2 cup mayonnaise (or Greek yogurt)
  • 2 tablespoons lemon juice
  • 1/4 cup red onion, chopped
  • 1/2 cup celery, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Wash and slice the fresh cucumbers into thin rounds.
  2. In a large bowl, combine the sliced cucumbers, crab meat, chopped red onion, and celery.
  3. In a separate small bowl, whisk together the mayonnaise (or Greek yogurt), lemon juice, salt, and pepper.
  4. Pour the dressing over the crab mixture and toss gently to coat.
  5. Cover the salad and chill in the fridge for about 30 minutes.
  6. Toss gently again before serving, optionally on a bed of greens or in lettuce cups.
