Ingredients

- 2 fresh cucumbers, sliced
- 1 cup crab meat (fresh or canned)
- 1/2 cup mayonnaise (or Greek yogurt)
- 2 tablespoons lemon juice
- 1/4 cup red onion, chopped
- 1/2 cup celery, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Wash and slice the fresh cucumbers into thin rounds.
- In a large bowl, combine the sliced cucumbers, crab meat, chopped red onion, and celery.
- In a separate small bowl, whisk together the mayonnaise (or Greek yogurt), lemon juice, salt, and pepper.
- Pour the dressing over the crab mixture and toss gently to coat.
- Cover the salad and chill in the fridge for about 30 minutes.
- Toss gently again before serving, optionally on a bed of greens or in lettuce cups.
