Description

Juicy turkey fillets coated in a crunchy breadcrumb crust, paired with sweet and tangy cranberry sauce for a comforting meal.


Ingredients

  • 4 turkey fillets
  • 1 cup breadcrumbs (whole-wheat or panko)
  • 1/2 cup Parmesan cheese, grated
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 cup cranberry sauce (homemade or store-bought)
  • 1 egg (or flax egg for vegan option)
  • 2 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season turkey fillets with salt and pepper, then dip each into the egg to coat.
  3. In a bowl, mix breadcrumbs, Parmesan cheese, and herbs. Press this mixture onto the egg-coated turkey fillets.
  4. Place the coated turkey on a baking sheet lined with parchment paper. Drizzle olive oil on top.
  5. Bake for 25-30 minutes, or until cooked through and the crust is crispy.
  6. Plate the turkey fillets and top with cranberry sauce. Serve and enjoy!

Notes

For an extra crunch, broil the fillets for the last 2-3 minutes.
