- 4 turkey fillets
- 1 cup breadcrumbs (whole-wheat or panko)
- 1/2 cup Parmesan cheese, grated
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 cup cranberry sauce (homemade or store-bought)
- 1 egg (or flax egg for vegan option)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Season turkey fillets with salt and pepper, then dip each into the egg to coat.
- In a bowl, mix breadcrumbs, Parmesan cheese, and herbs. Press this mixture onto the egg-coated turkey fillets.
- Place the coated turkey on a baking sheet lined with parchment paper. Drizzle olive oil on top.
- Bake for 25-30 minutes, or until cooked through and the crust is crispy.
- Plate the turkey fillets and top with cranberry sauce. Serve and enjoy!
Notes
For an extra crunch, broil the fillets for the last 2-3 minutes.
