Description

A cozy comfort food featuring shredded chicken in a rich broth with white beans and zesty spices.


Ingredients

  • 1 lb Boneless, Skinless Chicken Breast
  • 2 cans White Beans, rinsed
  • 1 can Diced Green Chiles
  • 1 medium Yellow Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Chicken Broth
  • 8 oz Cream Cheese
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1 tsp Oregano
  • Salt and Pepper, to taste


Instructions

  1. Place the chicken breasts at the bottom of the slow cooker and season lightly with salt and pepper.
  2. Add the chopped onion, garlic, and diced green chiles over the chicken.
  3. Rinse the white beans and layer them in. Pour in the chicken broth.
  4. Sprinkle in cumin, chili powder, and oregano.
  5. Cover and cook on low for 6-8 hours or on high for about 4 hours.
  6. Once cooked, shred the chicken in the pot. Stir in the cream cheese until melted and combined.
  7. Taste and adjust seasoning as desired.

Notes

For a creamier texture, adjust the amount of cream cheese to your preference. This chili freezes well, making it a great meal prep option.
