- 1 lb Boneless, Skinless Chicken Breast
- 2 cans White Beans, rinsed
- 1 can Diced Green Chiles
- 1 medium Yellow Onion, chopped
- 2 cloves Garlic, minced
- 4 cups Chicken Broth
- 8 oz Cream Cheese
- 1 tsp Cumin
- 1 tsp Chili Powder
- 1 tsp Oregano
- Salt and Pepper, to taste
Instructions
- Place the chicken breasts at the bottom of the slow cooker and season lightly with salt and pepper.
- Add the chopped onion, garlic, and diced green chiles over the chicken.
- Rinse the white beans and layer them in. Pour in the chicken broth.
- Sprinkle in cumin, chili powder, and oregano.
- Cover and cook on low for 6-8 hours or on high for about 4 hours.
- Once cooked, shred the chicken in the pot. Stir in the cream cheese until melted and combined.
- Taste and adjust seasoning as desired.
Notes
For a creamier texture, adjust the amount of cream cheese to your preference. This chili freezes well, making it a great meal prep option.
