Description

A comforting and nutritious Crockpot Vegetable Medley made with a variety of fresh vegetables, perfect for busy days.


Ingredients

Scale
  • 4 Carrots, chopped
  • 2 Bell Peppers, chopped
  • 2 Zucchini, chopped
  • 1 Broccoli, chopped
  • 1 Onion, chopped
  • 3 Garlic cloves, minced
  • 4 cups Vegetable Broth
  • Salt to taste
  • Pepper to taste


Instructions

  1. Wash and chop all ingredients into bite-sized pieces.
  2. Place carrots and onions at the bottom of the crockpot, then layer with peppers, zucchini, and broccoli.
  3. Sprinkle with salt, pepper, and minced garlic. Pour vegetable broth over until covered.
  4. Cover and set crockpot on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, stir gently to combine flavors.
  6. Serve hot, or over brown rice or quinoa for a complete meal.

Notes

Ensure all veggies are similar in size for even cooking. Add herbs for extra flavor. Leftovers make a great base for soups!
