A comforting and nutritious Crockpot Vegetable Medley made with a variety of fresh vegetables, perfect for busy days.
Ingredients

- 4 Carrots, chopped
- 2 Bell Peppers, chopped
- 2 Zucchini, chopped
- 1 Broccoli, chopped
- 1 Onion, chopped
- 3 Garlic cloves, minced
- 4 cups Vegetable Broth
- Salt to taste
- Pepper to taste
Instructions
- Wash and chop all ingredients into bite-sized pieces.
- Place carrots and onions at the bottom of the crockpot, then layer with peppers, zucchini, and broccoli.
- Sprinkle with salt, pepper, and minced garlic. Pour vegetable broth over until covered.
- Cover and set crockpot on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir gently to combine flavors.
- Serve hot, or over brown rice or quinoa for a complete meal.
Notes
Ensure all veggies are similar in size for even cooking. Add herbs for extra flavor. Leftovers make a great base for soups!
