Ingredients

- 1 lb Ground Beef (or ground turkey/chicken)
- 1/2 cup Breadcrumbs (or crushed crackers)
- 1 Egg (or flax egg for vegan option)
- 1 packet Onion Soup Mix
- 1 cup Beef Broth (or vegetable broth)
- 1 cup Cheese (Swiss, Gruyère, or mozzarella)
Instructions
- In a large bowl, combine the ground beef, breadcrumbs, egg, and half the onion soup mix. Mix until just combined.
- Roll the mixture into golf ball-sized meatballs and set aside.
- Optional: Sear the meatballs in a skillet over medium heat until browned on the outside.
- Place the meatballs in the crockpot and pour the beef broth over them. Sprinkle the remaining onion soup mix on top.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, add the cheese on top, cover, and let it melt.
